The last of our Limited Editions has arrived in the store – Italian Brunello.  Brunello is a large-berried variety of the Sangiovese grape.  It’s fruity, with strong natural acidity, a firm and elegant assertiveness and a robust finish that can extend surprisingly long.  Try it with cheeses like Asiago and Parmigiano Reggiano, enjoy with tomato based pastas, or even all by itself!

DIY Winemaking is “Green” at Wine Central

For all of you DIY winemaking pros out there: following is a feature article written in collaboration with Winexpert on how you are supporting environmentally-friendly practices when making your own wine.

Remember the 3 R’s of winemaking—reduce, re-use and recycle.

Reduce

To “reduce” means using less resources from the beginning. This is the most effective of the three R’s and the place to begin.

Making and bottling your own wine means reducing the need for shipping heavy liquids in bottles across oceans and countries, which means reducing the need for natural resources.  By making your own wine locally, you can get 28-30 bottles of wine from the same space and weight it would take to ship only 12 bottles of commercially made wine.

Re-use

Before you recycle or dispose of anything, consider whether it has life left in it. There may be potential to re-use it or re-purpose it.

Here are some helpful general tips and guidelines for re-using when making your own wine.

  • Reuse the resealable juice bags from our wine kits to make icepacks.  Fill them up to 80% with water then freeze.
  • Refilling bottles with wine make from kits reduces the volume of glass sent to the landfill.
  • Reusing leftover oak chips from fermentation as smoke chips for barbecuing adds a wonderful wine flavour.
  • Composted leftover oak chips from fermentation can be added to your garden soil or used as mulch.
  • Reuse corks by using them in arts and craft projects.
  • Wine kit boxes are great for packing or donating to international aid organizations, which are always in need of boxes for shipping.

Recycle

Recycling is the “R” that has adopted most enthusiastically. Partially this is because there are so many local recycling programs today, which makes recycling so incredibly easy to do.

  • All kits are sold in cardboard boxes which are completely recyclable.
  • Kits contain juice bags made with materials that are recyclable.  Once finished with the bag, rinse and then recycle.

This wine can be left unoaked, for the cutting edge of the New World style of racy drinkability, or gently oaked to add notes of vanilla, smoke and butterscotch, along with a lengthened structure and sophisticated finish.
